Pancho's was established in 1983 by a local family and the current owners took over in 2000 and continued to make improvements on the building as well as the menu. The current owners realized Pancho's was well known when in their travels as well as in their families and friends' travels from the Bahamas to Haiti to Colorado Springs, people recognized the Pancho's name. Pancho's was well known for their original hot sauce and the red chili was added in 2003 and the green chili was added in 2010 which was created by the owner's son. The chicken and pork recipes were revamped in 2010 and the black beans and pinto beans are made on site. The Pancho's name has the possibility of being franchised but it has not been at this point. The business stays open year round for the locals and is one of the very few restaurants that have a dive up window with the option of front window sales and and indoor seating.
